Pom-Pom Mushrooms
Scientific name: Hericium erinaceus
This exotic snow white mushroom received its name from its resemblance to a cheerleader’s pom poms. It is also known as “hedgehog”, “coral”, “Lion’s Mane”, “bearded” or “Monkeyhead” mushroom. Until recent domestic cultivation, these choice mushrooms were a rare and prized find in the woods.
Asian folklore says eating these mushrooms will increase vitality and vigor. Traditional Chinese medicine and recent research indicates their therapeutic effects as anti-tumor and lipid lowering, as well as protection of liver functions. They readily grow on fallen trees, particularly the Red Oak. This delicious morsel is found in many locales, thus the many names by which it is known.
Although equally delicious in their own way, Pom-Poms are not as sturdy as their shiitake cousin. Because of their fragility they should be as white as possible when purchased. If there are yellow stains visible, then it should be avoided. Pom-Poms have a very firm texture similar to crabmeat or lobster. They are excellent when done as tempura or shredded into any dish. When served whole they are a dramatic garnish or a unique appetizer. Pom-Pom mushrooms may seem a little unusual at first, but believe me they are mouth-watering!
King Oyster Mushrooms
Scientific name: Pleurotus eryngii
Also known as “almond abalone mushroom” from Chinese translation because of its similar texture to abalone and almond. This mushroom is the largest species in the Pleurotus genus. It has a thick, meaty stem with a small cap which distinguishes it from the rest of the Pleurotus family. Due to the more fleshy texture of this mushroom, it is voted as the best tasting among all oyster mushrooms, and therefore acquiring the title “King Oyster”.
