Shiitake Crusted Chicken Breast
INGREDIENTS:
1 tsp olive oil
50 g APF Shiitake mushrooms (stems removed, roughly chopped)
50 g panko bread crumbs
20 g parsley (finely chopped)
½ lemon (zested)
¼ cup all purpose flour
1 large egg (lightly beaten)
1 whole skinless, boneless chicken breast
to taste salt & pepper
METHOD:
* In olive oil lightly sauté Shiitake mushrooms until soft
* Mix mushrooms, half of the bread crumbs, parsley and lemon zest in a bowl
* Season chicken breast with salt and pepper
* Dredge top of breast in flour shaking off excess flour
* Dip floured chicken breast in beaten egg and then pat on mushroom mixture
* Bake mushroom side up in a 350 F oven for 12-15 minutes or until cooked through
